Ingredients
- 1 ripe banana (the riper, the better for natural sweetness)
- 1 cup frozen mixed berries (I love the berry medley from Costco)
- 1/2 cup steamed and chilled artichoke hearts (trust me on this one)
- 1/2 cup fresh spinach (totally optional but adds gorgeous color)
- 1/2 cup almond milk (start with less—you can always add more)
- 1 tbsp chia seeds (naturally vegan and amazing for texture)
- 1 tbsp almond butter (or any nut butter you love)
- 1 tsp agave syrup, optional (taste first—you might not need it)
- Toppings: sliced almonds, shredded coconut, fresh berries
Instructions
Start by tossing your banana, berries, artichoke hearts, and spinach into your blender—don’t worry about perfect order here. Add the almond milk, chia seeds, almond butter, and agave if you’re using it.
Blend until it looks absolutely gorgeous and reaches that perfect thick consistency—about 60 seconds should do it. If it’s too thick to blend smoothly, add almond milk one tablespoon at a time until it moves freely.
Pour your beautiful creation into your favorite bowl (use a big one because this is satisfying). The mixture should be thick enough that toppings won’t sink right in.
Pile on those gorgeous toppings however makes you happy—I go nuts with the almonds and coconut because texture contrast is everything. Add fresh berries on top if you can resist diving in immediately.
Notes:
- Don’t skip steaming the artichokes first—raw ones are way too tough and bitter for this magic to work
- This tastes even better when you let the chia seeds sit for a minute to plump up
- Start with less artichoke and work your way up until you find your perfect balance
Storage Tips:
- This is definitely best enjoyed immediately, but you can prep artichokes ahead of time
- Don’t freeze this one—the texture gets weird when thawed
- Leftover smoothie base keeps in the fridge for one day max
