Ingredients

Scale
  • 14 oz canned young jackfruit in brine, drained and shredded (not the sweet syrup kind!)
  • 1/2 cup breadcrumbs (fine texture works best)
  • 1/4 cup nutritional yeast (the secret to incredible flavor)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika (adds warmth and depth)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup unsweetened plant-based milk (naturally vegan and binding)

  • Cooking spray

Instructions

  1. Set up for crispy success – Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper. Don’t skip the parchment for easy cleanup!
  2. Prep your jackfruit – Drain jackfruit thoroughly and shred with your hands or a fork until it resembles pulled meat. Press with paper towels to remove excess moisture—this step is crucial for crispiness!
  3. Create your flavor base – In a large mixing bowl, combine shredded jackfruit, breadcrumbs, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Bind it together – Pour in plant-based milk gradually, mixing until the mixture holds together when squeezed but isn’t too wet. You want it cohesive but not soggy.
  5. Shape your puffs – Using your hands, form the mixture into small puffs about the size of golf balls. They should hold their shape nicely without being too compact.
  6. Arrange for golden magic – Place shaped puffs on the prepared baking sheet, leaving space between them for even cooking.
  7. Spray for crispiness – Lightly spray puffs with cooking spray for that gorgeous golden finish that makes them irresistible.
  8. Bake to perfection – Bake for 25-30 minutes until golden brown and crispy. They should sound hollow when tapped and look absolutely stunning!

Notes:

  • Squeeze out moisture from jackfruit thoroughly for best texture
  • Don’t make them too large – smaller puffs cook more evenly
  • Check doneness by tapping—they should sound hollow when ready

Storage Tips:

  • Best served fresh and hot from the oven
  • Freeze uncooked puffs for up to 3 months and bake from frozen
  • Reheat in 350°F oven for 10 minutes to restore crispiness

Serving Suggestions:

Perfect as appetizers with vegan ranch, over salads for protein, or in wraps for complete meals.

Mix It Up:

  • Add fresh herbs like rosemary or thyme for sophistication
  • Try spicy versions with cayenne and extra paprika
  • Make Asian-inspired with ginger and sesame oil
  • Shape differently for various uses (burger patties, nugget shapes, etc.)
